Ever have a day planned where you are going to be super productive and get tons of things done, but wake up to find that your internet has officially crapped out and won’t be back up for another 24hrs? What the heck am I supposed to do with my time for 24hrs without internet? Laundry? Yoga? Write 3 blog posts in Word? Check. Check. and Check. Oh, and take photos of my food for this week’s WIAW.
So you read the title right, we are back to the Whole30, and no one could be more happy about that than me! After our weigh-in and measures on Sunday night we are convinced this is what we need to do to get back on track with our goals. No more nights full of cheese or cookies for breakfast.
Over the weekend I made Ben a delicious breakfast in bed with mimosas, coffee cake, and baked eggs. My baked eggs scored a 10 out of 10 with him – the first perfect meal I have made since we started ranking each others cooking. (in the nicest possible way we make suggestions on flavoring and how we could improve dishes, it’s really helped us to become better home cooks.)
I have been trying to recreate those eggs paleo style since then, as the original recipe calls for butter, cream, and cheese. This was my second attempt and I’m now convinced that the deliciousness of this dish all lies in the parmesean cheese melted over top. The paleo version just doesn’t live up to the real deal.
I usually work through lunch – I mean I eat, obviously – but it’s usually just a bowl next to the computer while I bang away the next post for TPC. Since we were without internet and one of the gifts I received from Ben on valentines day was a copy of one of my favorite magazines I felt there was no better time than to read while I ate. It was nice to take a break, albeit short, from the computer for this delicious Apricot and Chicken Curry from The Paleo Kitchen Cookbook.
I have a feeling this time around on the Whole30 I am going to struggle a little bit. I had cake cravings on Monday, and yesterday I thought the world was going to end if I didn’t have an afternoon snack. Like I said, this was the best time to start another Whole30 because my bad habits were creeping their way back. Can you say sugar addition??
I am the newest fan of zoodles! When we did the first whole30 we made a meal with zoodles once, really poorly cut zoodles I might add. Last night we made a paleo turkey bolognese with zoodles julienned and I am the biggest fan! I spiced up a plain jar of pasata with basil, oregano, and red pepper flakes, then stirred in some sauteed mushrooms, onions, garlic, and turkey. Within 15 minutes of simmering on the stove it was ready to be eaten… and was freakin fantastic!!
