Well yall, this is the first time I am writing a WIAW post, on a Wednesday, about the food I ate, on a Wednesday. I should get a cookie for doing this right… unfortunately I don’t have one. But, what I do have is a bunch of delicious food to share with you.
I started my day off with pasta, Penne with Four Cheese pasta to be exact. Shhhh, don’t tell Ben, he ate an apple.
This is my absolute favorite pasta dish. Wait, scratch that, Penne with Three Cheeses is my favorite dish from home but since I couldn’t find Fontina or Gorgonzola at the supermarket (and really wasn’t looking very hard) I subbed those out for Gouda, Blue Cheese, and Feta added to the Parmesan that is in both recipes. My substitutions were just as good so I can’t wait to share this recipe with you guys.
Ben had me take some photos while I was cooking but they all turned out crummy due to lighting at 8pm so I said I would make this dish again and photograph it in better light after we finish the Whole30 in March. He didn’t mind because that means he gets pasta again – I hope you don’t mind because this recipe is damn delicious!!
I ate pasta for breakfast for one reason, and no it’s not because I am carbo loading. I took a bartender training class this morning, rocked it btw, and now I am a certified bartender – just need a job. I didn’t want to go to class on an empty stomach so I filled up with carbs to hold down the beers I poured/drank during class.
During the lunch break I walked across the street to the Paleo Café (I’ve mentioned it several times on here before) and grabbed a Coconut Pork Curry from their premade lunches.
Following curry I had two drinks (during the class obviously) but I didn’t use my phone out of respect for the teacher. You can imagine what beer looks like I am sure.
Last weekend during wine and cheese night I randomly put apples on the plate next to cheddar and cider. It was the most wonderful flavor combination ever! So tonight I made a play on grilled cheese with apples and cheddar, paired with a spinach and walnut salad.
Every night this week Ben and I have ranked our meals on a 1-10 scale (10 the best) and he gave this one an 8, while that pasta with four cheeses scored a 9 last night. Not too shabby!
Being the lovely girlfriend I am… lovely and about to start a Whole30 so I am stuffing my face with cheese and sugar girlfriend, I texted Ben before he left work casually reminding him we were out of desserts at home so if he picked up anything on the way I wouldn’t be opposed. He came in an hour later with this…
