It has been raining since Monday here in Newcastle and because of that the motivation to plan dinners and lunches – or even go out of the house to buy groceries. Thanks ben for picking them up. I kept my meals super simple on my rainy day WIAW Tuesday because I couldn’t be bothered.
Ok, so maybe I could be bothered… but only a little. Last week we bought 19 bananas. You read that right, 19. Today we only had five remaining – well now it’s two. I really wanted to make muffins and curl up on the couch, so I whipped up paleo banana muffins for breakfast and added in pineapple and coconut, they were in desperate need of additional flavor. I’m still not happy with them, but whatev. For lunch it was reheated gluten-free pizza from Pizza Hut because we ain’t cookin in this weather. Not paleo, not sorry. And dinner was an apricot chicken curry, because it was super easy to throw together and leave on the stove simmering all evening while Ben and I cleaned up more of our house.
