It’s been a fun month and a half of eating whatever the heck I want… but the headaches and required afternoon naps have returned, and I am just not having it anymore… so back to paleo we go!
I started prepping dinner first thing this morning, which might be why I was in such a “let me cook a big meal mood” for breakfast. We have about seven mangos in our fruit bowl, and after Monday night tacos I was on a heat kick, so I whipped up mango salsa and cut up a kiwi to eat with a fried egg.
And of course I sent photos to Ben, because what kind of girlfriend would I be if I didn’t send him photos of the breakfasts I cook while he is at work?
Alright, I would be a nice one. Answered my own question.
I got hungry in between breakfast and lunch and cut up an apricot to snack on.
I absolutely love dried apricots, but I honestly can’t tell you if I have ever had a fresh apricot until earlier this week… I don’t know why. They are delicious!
Lunch was leftover lettuce wrap tacos.. but instead of eating it as tacos I cut up my lettuce and made a salad. The one problem with this was that I didn’t have any dressing for it. So I ended up with a dry taco salad and some pineapple. Doesn’t taste as good as it looks.
**I made this again for lunch today, this time with a dressing that knocked my paleo lovin socks off!!**
Dinner consisted of Nom Nom Paleo’s Asian Chicken Thighs and a fruit salad I whipped up while the chicken was baking. She has a really delicious marinade for this recipe, but it makes a TON of chicken.. leftovers for days!!
I am loving all of the beautiful summer fruits, especially mangos, this year so it was a no brainer to combine bananas, oranges, apricots, mango, and pineapple with a little bit of coconut as a side dish.
