I’ve officially been writing WIAW (What I Ate Wednesday) posts for the past five weeks and this morning I realized that I haven’t really written about a typical day of food. The weather in Newcastle is still deciding if it wants to be Aussie and kick into spring, or American with chilly weather. Since this morning it was a bit cold I decided to make scrambled egg with fried ham and a nectarine. I try not to do hot breakfasts when the weather is warm so I figure this may be one of the last scrambled egg breakfasts I make for a while.
Last night we made fajitas and doubled up the recipe so we would have more than enough for lunch. This may be a box recipe – we are cheap and easy – so not paleo for dinner, but I made sure to omit the wraps and salsa packet during lunch and just have steak, veggies, and guac. After being a lifelong avocado hater, guacamole is slowly becoming one of my favorite things!
I was super excited about picking up these new mugs during our Big W “adventure” last weekend, and can’t help but to drink every smoothie out of them now!
Ben has officially labeled this dish my signature dish. It’s a sweet and spicy pork with pineapple and peppers, my signature dish would have pineapple in it. It’s completely paleo, and whole30. No joke we make this once a week! And just before we cook the pork he fries up pork belly “crackle” to snack on while we finish cooking the dish.
And this right here is where I jump off the paleo bandwagon for the day and show you my totally not paleo dessert. If you’re Aussie you’ll know these all too well, and if you’re American… well, when you come visit I’ll take you to get one! Golden Gaytime Bars are a toffee and vanilla ice cream bar, dipped in chocolate, and topped with honeycomb pieces. They are my favorite snack when we are driving through the country, but our grocery store had a box of them on special this week, so we just had to pick up a little treat!

french fries chips (in my opinion) on earth! These chips are beer battered, quick fried, and covered in delicious sea salt for the best non greasy chips you could ever imagine. So not paleo and so delicious!! They also come with an incredible view too. What did you eat this week?
