There’s a reason I do most of the cooking in our house… because if you saw some of the dishes that come out of the kitchen when Ben cooks you would want to order takeout, or roll your eyes at the sight of steak and salad (Aussie bachelor food) again!! Sometimes I am feeling risky and see what he can come up with though and after working a double on Tuesday I was not risking my meal. Here we go.
My breakfast and morning snack included yogurt, grapes, a glass of water, and a banana. I always eat a banana before work just for a boost of energy and to keep my mind right.
I attribute my abilities to bike over a hill to work to the banana as well, without which I would be stuck at the bottom I am sure!
So this is where things get messy.
In preparation for a double shift Ben decided he would make me some chicken fingers Monday night for lunch on Tuesday. It was the sweetest thought, until he forgot they were in the oven and we ended up with blackened crispy fingers. Let’s just say leaving chicken in the oven 40 minutes longer than advised is not the smartest thing Ben’s ever done. He wanted to make it up to me so he packed me a “sandwich” when I got home from work this is what I found…
There’s no way I could be upset at burnt chicken when I had such a cute lunch with talking sandwich bags! This sweet gesture was the equivalent of getting a note in your lunchbox as a kid, the best lunch day ever! I constructed my mini sandwiches and enjoyed my two hour break before grabbing another banana and walking to work.
Working a double means Ben cooks dinner, aka takeout eaten off the plates at home to make it look homemade.
I got a Mexican schnitzel in honor of Cinco de Mayo which is just breaded and fried chicken topped with tomatoes, sour cream, and guacamole! I figured if me work schedule got in the way of celebrating at our favorite little Mexican spot I would atleast feel like I was there which means…. TEQUILA!
We capped off our night with tequila shots and House of Cards… and were reminded as to why you never do tequila shots with the cheap stuff. Yuck! How did you celebrate Cinco de Mayo?
