Celebrating the Queen’s birthday is a new thing for me.. after all we Americans cut our ties with England long ago.
Then again, I am always up for a three day weekend and decided that this week’s wiaw would be a perfect match for the queen’s special day.
Ben and I woke up in Sydney on Monday and headed to our favorite spot for breakfast, Oceans Narrabean. We both decided to split the mango smoothie which was a good decision because with Ben feeling a bit hungover I got to drink most of it. I ordered the Breaky Wrap with chorizo, eggs, rocket, and chili jam; while Ben ordered his go-to the Eggs Benedict served over corn and sweet potato fritters.
We agreed Ben’s choice might not have been the best to soak up what he drank the night before, but we could always take care of that later.
His eggs benny was giving me so much breakfast inspiration though. I just love veggie fritters in the morning!
We drove home with full intention of stopping at Mad Mex for a burrito but passed it along the highway and went home to snuggle up on the couch with a cup of tea and leftover donuts.
Ever since we started splitting desserts back on our holiday in America, one person has been chosen as the designated cutter and the other the chooser of which piece they want to eat, this keeps things fair. I was chosen as the donut cutter (probably cause of my super cool matching pajamas).
The donuts were just as good as they were when we bought them on Saturday at the markets.
After our donut escapades I was fresh out of ideas for dinner so we defrosted some chicken wings and I planned on making my go-to Sweet Chicken Wing recipe.
But guess what, they don’t sell Catalina dressing in Australia, and while I have all the ingredients to make my own who really wants to make their own catalina dressing on Monday night at 7:30… not me!
I ended up making a different sweet chicken wing marinade I altered from this recipe and am so excited to make it again for the blog paleo style because it was amazing!!
I seriously ate the sauce with a spoon off the baking tray!
We are headed to Cake, Bake, and Sweets in Sydney on Friday and I cannot wait to share with you all the yummies we eat at the festival for next week’s WIAW.
