I am the self appointed smoothie queen. Yep, I said it. I love a good smoothie and make one almost everyday, sometimes for breakfast, dessert, or a mid day snack; my blender is always running.
Back in my working life I made smoothies each morning the same way: a bit of strawberry, banana, flax seed, milk, and oats. Now I do things a bit differently. No oats, flax, or milk for me, just fruit and 100% fruit juice. I’m also poor now, like beyond poor (thank you Benjamin for being so kind as to buy me fresh fruits!) so I always use the fruit of the season and anything we can buy for the cheap.
In this case it was apricots, a fruit that up until this year I had only tried in it’s dried form. Let me tell you if you haven’t tried a fresh apricot you’re missing out – especially you peach lovers. Fresh apricots are sweet little fruits with a slightly fuzzy skin similar to a peach. It’s got a small pit in the middle so be sure to cut that out before you consume.
I’m a peach pit swallower. Don’t be a pit swallower. This is another story for another day.
Back to the Sunburst Smoothie.
I called this combination of orange, banana, and apricots a Sunburst Smoothie because the moment you take a sip you are overcome with a flavor that wakes up all your senses. It just tastes like a giant burst of sunshine! It’s the perfect way to start your day!
- 2 fresh apricots
- 1/2 banana
- 1/4 - 1/2 cup orange juice
- 1/2 cup ice
- Pit and cut apricots into slices or chunks
- Add apricots, banana, and orange juice to blender. Blend on low until smooth.
- Blend half of the ice cubes into smoothie until completely incorporated. Repeat with the remaining ice.
- Serve and enjoy!
