I am so excited to share with you my space on the internet.
I started this blog in December of 2013 after dreaming about it for two years. The motivation to start writing came as I prepared to move to Australia in early March 2014. I was born and raised in Tampa, Florida and left the comforts of friends, family, and warm sunny weather for… well… more sunny weather, oh and a boy too!
I know what you are thinking, moving to the other side of the world for a boy? I never thought I would be doing this either, but he is different, I promise! We met almost ten years ago on a vacation in Fiji and…. well, you can just read about him here.
Now, getting back to The Pineapple Cake.
I use my blog to post my recipes, fashion, and adventures in Australia. I love to bake, and my first cake was my inspiration for the name of this site, The Pineapple Cake.
I have never trained professionally (I did pass Level 1 of the Wilton Cake Decorating course!) and the recipes I post are of my “experiments” in the kitchen. I say experiments because sometimes they don’t always turn out so great, and when that happens, I won’t be sharing those with you. If I won’t eat it, why would I want you to try it? Sometimes a recipe is tested once because it is just that good, other times three to four times before I’ll post it. If you have a recommendation, changed it when you baked it, or a question I would love to hear it! And if I missed a step or ingredient, I would love to hear that too!
I am not fond of mint or peanut butter, so you probably won’t see a recipe including those pop up anytime soon. Sorry.
When it comes to fashion I am probably the last person to tell you how to dress or what to wear. I feel honored that I get asked for my opinion so often on what someone should wear, or asked by friends to accompany them shopping. I find it flattering because I was the same way before I had some giant fashion epiphany in 2012 thanks to an insanely fashionable friend. I was very content in my gym shorts and t-shirt 24/7. Don’t get me wrong, comfort is key, but there is a way to do it fashionably (or at least look presentable) and I hope to share that with you. If you are ever interested in something I wear, or what you see in a photo, feel free to ask, I am an open book on my fashion secrets.
